Vintage Recipes: roast pork with vegetables and apple pie spice

2 fillets of pork, about 3 / 4 pounds each
2 pounds red potatoes, washed and quartered
1 carrot pound, halved and cut into 2-inch
1 medium onion, sliced
1 teaspoon tablespoons olive oil
2 c. Tea of dried rosemary, crushed
1 teaspoon sage
Salt 1 / 2 teaspoon
1 / 4 teaspoon Pepper Tea

Place fillets in a baking pan shallow that has been lightly oiled. Organize the vegetables around pork, drizzle with oil. Mix seasoning and sprinkle with pork and vegetables. Bake, uncovered, in oven at 450 degrees for 40 minutes or until it is a meat thermometer reads 160 degrees. Stir occasionally during cooking vegetables.

Makes 6 servings. 3 oz meat + 1 cup of vegetables equals 331 calories, 40 g carbohydrates and 28 grams of protein.

APPLE Spice Cake

This is an old newspaper clipping from the Times Daily Mail Bedford Bedford, Indiana. The court does not say, but I think that the recipe was in an ad from "Appleacres. Appleacres is a local company that specializes in apples from their own apple orchards.

Mix 2 cups apples, 1 cup sugar and let stand for 15 minutes.
Add:
1 egg
1 cup flour
1 / 2 cup nuts
1 / 2 cup raisins
pinch of salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon Soda
1 / 2 stick butter

Mix, pour in a greased pan and bake at 350 degrees for 25 to 30 minutes. Delicious!
